These are good for people that like the taste of Gingerbread without it being overpowering.
Using "Daddy CakesŪ Glamorous Gingerbread" pancake/baking mix - Add the water plus 2 eggs & 1/4 cup of Vegetable oil to 1 lb of mix.
Stir until blended.
Gently fold in 1/2 cup of fresh blueberries - (Optional, but adds a delicious flavor combination)
In a muffin pan, line with muffin papers and fill with equal portions.
Bake at 350 degrees until done (appproximately 14-18 minutes)
These are great anytime of the year. |
